Raw Bites: Butternut Squash Soup

Growing up, I refused to eat any kind of squash; it just didn't appeal to me. Over the last few years though, I've started to experiment with it a little bit - it's everywhere at the farmer's market and I can only stay away for so long. Now I love zucchini, have tried spaghetti squash and this past summer it was time for butternut squash. I found a great, healthy and simple recipe for a soup in a wonderful cookbook that I've been reading (Living Cuisine by Renee Loux Underkoffler) and I picked a small squash at the market so that I could try it out. The verdict is in, and I couldn't be happier with this soup; the fun part is that sweetness of the squash makes it seem so indulgent when in fact it's incredibly healthy!


I first made this soup back in June since I couldn't wait any longer once I found the recipe, but the season for pumpkin and squash is right now, so I think another batch of it will be on the stove soon.

  3. I love butternut squash soup! I'm always interested in seeing how other people make theirs. I bake my squash, puree it with a can of coconut milk and add season salt for taste. Delish, easy and Paleo, too!

  4. I love squash, it's one of my favourite vegetables - especially zucchini! But one of my favourite fall soups is actually a Gouda and Lentil soup with sweet potato and cherry tomatoes. I found the recipe online on the Canadian Living website, and I highly recommend it. It's sweet, slightly chewy and perfectly comforting on a cold day!
