Raw Bites Lately

I've mentioned already countless times my goal to clean up my eating habits - not that they were too terrible to begin with, but there is definitely room for improvement. I discovered the concept of raw food quite a while ago, and this summer felt like the perfect occasion to experiment with a few recipes; I was so happy with the results that now I am more excited than ever about incorporating them regularly into my meals. Here are a few of the ones that I enjoyed over the last month:

Zucchini Hummus - I found this recipe on Vixi, a wonderful blog written by wellness educator and health coach Ashley Pitman, and since I'm not a big fan of the original hummus but love zucchinis, it seemed like a great alternative. I used all ingredients as given in the recipe and though it was yummy, next time I'd probably use a little less salt and lemon juice.

Superfood Chocolate Crackles - These treats come courtesy of Jessica Nazarali from Live Healthy Simply, and they're the perfect little healthy indulgence when craving chocolate. Since I didn't have the goji berries that the recipe called for on hand, I dehydrated some blueberries and used them along with almond butter - instead of peanut butter - with great success. They give just a little touch of sweetness, but if you need more, adding a drop of honey on top of the crackle before eating it will do the trick.

Raw Rolled Oat Cereal - This recipe comes from author and nutritionist Kimberly Snyder, and has already become one of my favourite breakfasts. This particular time, I used half the amount of avocado that the recipe calls for and added a banana as well as a few of the leftover dehydrated blueberries from the Chocolate Crackles. Besides the taste, what I love about this oatmeal is that it keeps me full far longer than any other breakfast meal. 

Date Balls - You could never tell that this recipe from health and life coach Melissa Ambrosini of The Path to Wellness contains absolutely no sugar and just 4 ingredients, because the result is an unbelievably tasty ball of goodness.

  1. Wow I will definitely have to make some zucchini hummus. Living in the northwest, I get SO SO many in my CSA bin! I am always looking for new uses for it.

    1. You're welcome! I'm glad you like it!
      We have a few zucchini plants in our vegetable garden and now, more zucchinis than we know what to do with, so this was a great way to use some of them.

  2. Thanks Ana! I totally love making zucchini "pasta". I also like stuffing them. I'm thinking of making some zucchini pickles this fall. YUM! I'll check out the veggie mix. :)
